Local farmers take great care of Hida cows in the natural environment. The quality and taste of Hida beef makes it one of the best types of Wagu beef. Surrounded by mountains, rivers that run through Hida Takayama contain clean water. Fish from these rivers such as natural ayu (sweet fish) and Japanese char taste best when they are simply grilled with a pinch of salt. We offer charcoal grilled seasonal river fish.
Hida Takayama proudly produces a number of wild vegetables such as butterbur flowered-bud (fukino tou), taranome, and udo. Our ancestors invented very unique local wild vegetable dishes with various seasonal ingredients. The aroma of these wild vegetables makes you curious where they grow.
