Thanks to its clear air and pure water, nature rich Hida Takayama provides us a number of seasonal ingredients. Our seasonal cuisines from local nature promise you an unforgettable food experience.
Local farmers take great care of Hida cows in the natural environment. The quality and taste of Hida beef makes it one of the best types of Wagu beef. Hida beef is famous for its beautiful marbling pattern, juiciness, deep flavour and sweetness. Our selected beef supplier brings the finest quality meat to us. Enjoy our speciality, lava cooked Hida beef steak.
Surrounded by mountains, rivers that run through Hida Takayama contain clean water. Fish from these rivers such as natural ayu (sweet fish) and Japanese char taste best when they are simply grilled with a pinch of salt. We offer charcoal grilled seasonal river fish.
Hida Takayama proudly produces a number of wild vegetables such as butterbur flowered-bud (fukino tou), taranome, and udo. Our ancestors invented very unique local wild vegetable dishes with various seasonal ingredients. The aroma of these wild vegetables makes you curious where they grow.
Meals are provided in a private room
Dinner and breakfast will be provided not at your room but in another private room like at a Japanese traditional style restaurant.

My speciality is traditional Kyoto cuisines, and I believe food experience must be pleasurable for both eyes and tongue. A starter shows a sense of season then the appetizer creates glamorous looks. Main courses such as Hida beef steak and river fish are cooked vigorously in front of the guests at the hearth. As a palate freshener, western style creative cuisine is served. This is an example of Iiyama's unique food. I hope our guests enjoy Hida Takayama's modern local food until their hearts content.
